- Maple demo interpolating an 2N-1 degree polynomial thru the 2N points: (0,0), (1,0), (2,0), (3,0), ... (N-1,0), (N,1), (N+1,1), (N+2,1), ... (2N-1,1). The polynomial oscillates wildly especially near the ends. As N increases, the oscillations gets worse. This shows that you don't want to use hi-degree interpolations.
